Our Story
Slow on purpose
Juniper Table started with a stubborn belief: a neighborhood bakery should smell like one. That means fermenting dough while the street is still dark, laminating butter in small batches, and never freezing anything we wouldn't serve our own kids.
What we won't hurry
The ferment
Our levain is older than the shop and fed twice a day. Sourdough gets its 48 hours — flavor doesn't do overtime, it does time.
The butter
Croissant dough rests between every fold. Twenty-seven layers can't be rushed; they can only be respected.
The grain
Wheat from Pennsylvania farms, milled in small lots so the flour in your loaf was a field not long ago.
A table, not a queue
There's a long table by the window with the day's papers on it and no opinion about how long you stay. Reading runs on places like this — we intend to be one for a long time.
